Manuscript of Toong’s Promotion of the Mediterranean Diet Published
Ken Toong, executive director of auxiliary enterprises, is a co-author of a manuscript recently published in the International Journal of Food Sciences and Nutrition.
The article, “Mediterranean diet – promotion and dissemination of healthy eating: proceedings of an exploratory seminar at the Radcliffe institute for advanced study,” is based on a presentation Toong gave, along with Harvard and international faculty, at Harvard’s Radcliffe Institute before the COVID-19 pandemic. Toong’s contribution to the presentation suggested some of the best ways to promote Mediterranean principles at institutions such as UMass and in the food service industry.
