Carbone Serves as Panelist on International Nutrition Health Literacy Webinar

Elena Carbone, professor of nutrition and associate dean for curriculum and academic oversight with the Commonwealth Honors College, served as a panelist on a webinar hosted by the International Health Literacy Association’s Nutrition Health Literacy Interest Group on July 6.

In the session “Nutrition Health Literacy: Achievements and Future Plans,” Carbone and fellow panelists discussed topics including nutrition and maternal health literacy, nutritional literacy as the social determinant of health equity, and digital healthy diet literacy in controlling chronic conditions and COVID-19. Each panelist shared their research findings and discussed implications for practice. The session also created a space for shared discussion and questions about future nutrition-related health literacy research globally. The webinar was part of a series that aims to educate and build community among current and aspiring health literacy researchers and scholars worldwide.

Carbone works in community settings to examine how low-income, culturally diverse populations with limited literacy skills attend to and process health information. Her mixed methods research engages communities and integrates behavioral interventions to promote health and prevent chronic disease complications. She recently co-authored a textbook chapter entitled, "Reintegrate Empowerment & Health Literacy to Advance Public Health and Healthcare Delivery."

Among her many leadership positions, Carbone serves as Vice Chair of the International Health Literacy Association’s Research Standards Committee and she previously served as Co-Chair of the Standing Committee on Policy and Advocacy from 2018-20.
