Arirang News, a Seoul-based international broadcasting station operated by the Korea International Broadcasting Foundation, recently interviewed D. Julian McClements, Distinguished Professor in the College of Natural Sciences's Department of Food Science, to learn about healthy, nutritious foods that can keep you energized during hot weather.

Interviewer: "With more people choosing…a vegetarian diet these days, what are some of the summer health foods you would recommend to keep us energized during this intense heat?"

McClements: "Things that have got a high moisture content and that are quite easy to digest. So things like watermelon, cucumbers, different kids of salads. If you do eat spicy foods, it causes you to sweat, and that’s the best way of cooling down."
