Alumna Victoria Zolla '23 Publishes Nut-Free Cookbook

Nutrition alumna Victoria “Tori” Zolla '23 has published No Need to Go Nuts, a peanut and tree nut-free cookbook with over 60 recipes for young adults with nut allergies. The work originated as part of Zolla’s honors thesis in 2023.

The cookbook is intended for young adults navigating life with a nut allergy, or a parent getting ready to send a child with food allergies off to college. Readers will find nutritious recipes for breakfast, lunch, and dinner, along with some snacks and desserts to keep individuals going and enjoying life's sweetest moments. Along with the recipes, No Need to Go Nuts includes helpful tips for grocery shopping and cooking as well as additional resources for managing food allergies independently. 

"If you are tired of eating in dining halls, unsure of what to eat, or looking for healthy recipes to prepare for the week, this book will be your new best friend," explains Zolla. "Quick and comforting meal ideas are abundant, along with nut-free recipes for classic favorites such as granola, pesto, and biscotti." 

After facing her own challenges with college dining options and trying to make healthy meals in her dorm room that lacked a proper kitchen, Zolla set out on a mission to help her peers navigate the challenges of having a nut allergy. 

“Having food allergies can make life difficult at times, but I believe that nutritious recipes are key when taking on life's challenges with energy and optimism,” she says. "I hope these recipes can help young adults improve their eating habits and find joy in cooking and eating because food should be nourishing, enjoyable, and fun for all!"

Zolla is currently working as a medical assistant while preparing to return to graduate school. She remains dedicated to supporting the food allergy community and shares her nut-free recipes, advice, and fun food finds on Instagram @nutritiouslytori.

No Need to Go Nuts can be purchased directly from BookBaby and is available for pre-order from online retailers Amazon and Barnes and Noble. It will officially release on those platforms on March 3, 2025.
