Lutz Grossmann Discusses Brewing Proteins on WHMP's 'Talk the Talk'
Content
Lutz Grossmann, an assistant professor in the College of Natural Sciences's Department of Food Science, recently discussed a process for "brewing new proteins" on WHMP's Talk the Talk radio show. The conversation drew from a presentation that Grossmann gave at a SciTech Café event at the Abandoned Building Brewery in Easthampton, MA on May 29, which explored how we can convert air and renewable electricity into proteins. Grossmann examines: the sustainability of our protein supply; the sources of our protein; and novel ways to produce protein.
“We are working on something where we use hydrogen gas…to produce a protein-rich bacterial cell, similar basically to a yeast cell, that we then want to transform into a real food that then can be consumed.”
