Alumna Carrie Forrest, who received her MPH in Nutrition from the University of Massachusetts Amherst in 2014, is the author of a new cookbook that combines healthy eating with the ease of Instant Pot® cooking. The Healthy Meal Prep Instant Pot Cookbook includes 75 recipes centered on delicious food that is fast and simple to prepare and cook. The book also teaches readers everything they need to know from proper food storage, handy guides and tips for cooking with an electric pressure cooker, and the secrets of advanced preparation, planning, and storage.
Forrest is the creator of the Clean Eating Kitchen website and YouTube channel, where she shares easy gluten-free and dairy-free recipes and tips to help women recovering from chronic disease. She has used a real food diet to recover from and manage multiple health conditions including PCOS, chronic migraines, anxiety, autoimmune disease, and thyroid cancer.
“I’m so grateful that I had the opportunity to earn my MPH in Nutrition through the online program at UMass,” says Forrest. “The education I received, particularly the ability to communicate nutrition information to diverse groups of people, has been invaluable in my career.”
Adds Forrest, “I hope that readers will feel more motivated to plan and prepare meals at home, and recognize that cooking in bulk can make it easier to save money, be more efficient, and eat more healthfully.”
