Dr. Christoph is a nutrition educator at the community college and university level. Her doctoral research involved curriculum development for adolescent nutrition education through the USDA Tween POWER (Preventing Obesity through Wise Expenditure of Resources) grant, and she continues to develop course materials at the college level for Wiley and Sons Publishing. She teaches full time at Holyoke Community College, where she runs the nutrition transfer program and teaches a variety of culinary, fitness, nutrition and public health courses. All of her work, including research, college level teaching, community education, product development, requires teaching. She values education and it is her mission to provide an environment that encourages students to think critically, problem solve, engage with their community, and see the world from an ecological lens.
