Sensory Study—Taste and Tongue Biology

This study will help to better understand sweet and metallic taste perception and the factors associated with variability across individuals. Total involvement is about three hours.

Chenoweth Laboratory at UMass Amherst

Are you eligible?

  • 18–45 Years old
  • Non-smoker
  • No tongue or lip piercings
  • Not pregnant or breastfeeding
  • No known defects in smell or taste
  • Not taking blood thinners
  • Not diabetic
  • Not diagnosed with COVID-19 in the last 30 days
  • Willing to provide salivary DNA sample
  • Willing to provide samples of taste buds

The study will help to better understand sweet and metallic tase perception and the factors associated with variability across individuals.

Total involvement: ~3 hours

Participants will:

  1. Complete ~1 hour online 2-day dietary assessment
  2. Complete a ~2 hour in-person session
    1. Taste solutions with sweet and non-sweet ingredients
    2. Report liking and intensity of sampled solutions
    3. Answer questionnaire on food liking and intake
    4. Provide a salivary DNA sample
    5. Undergo collection of taste bud structures*

*This will include a trained researcher to use small scissors to remove ~6–10 fungiform papillae from the front of your tongue.

These papillae are very small, and participants should not feel more than a prick or pressure on the tongue during the procedure.

No anesthesia is required.

Participants will receive compensation up to a $50 Amazon gift card.

Join the Nolden Sensory Team Database

The Department of Food Science is looking for participants to join a recruitment database for the Sensory Evaluation Laboratory. They are looking for participants who are 18 years old or older, who are not pregnant or breastfeeding, have no known food allergies, do not smoke, and do not have tongue or cheek piercings.  

Participants will receive emails about upcoming studies. Studies will typically require participants to taste and evaluate various food/beverage products or complete online questionnaires.
