Field of Study

Food-based strategy for health & wellness, the interplay between food components and gut microbiome, the health impact of a plant-based diet, bioavailability and metabolism of food components, enhancement of health benefits of food components by food processing, and toxicology of food components.

Research

My research is focused on identifying and characterizing food components that can modify human health positively or negatively, elucidating their molecular mechanisms, investigating possible interactions among these food components, and modifying biological activities and bioavailability of food components by food processing and nanotechnology with the long-term goal of developing food-based strategies for better health & wellness. A key focus of current research is on the interactions among food components, human body and gut microbiome in the context of health impacts. The role of a plant-based diet in human health is another focus of my research, and we are using novel food technology to enhance the health function of plant-based food and food components. I am also working on the toxicology of food components, such as certain food additives. The major approach of my research is the combination of chemistry, biochemistry, molecular biology, and nanotechnology in cell cultures, animal models, and human trials.
