Background

Dr. Vollmer earned his doctoral degree from Oregon State University, where he worked with Dr. Tom Shellhammer, focusing on the sensory and flavor chemistry of dry-hopped beer. Prior to this, he attended the UC Davis Master Brewers Program and achieved his Diploma in Brewing Certificate from the Institute of Brewing and Distilling. Dr. Vollmer graduated from UMass in 2011 with an MS from Dr. Eric Decker and in 2010 with a BS in Food Science. He currently serves as the Senior Manager of Product Strategy and Research at the Boston Beer Company, where he helps guide product development through research and collaboration with internal and external partner groups. Dr. Vollmer started his career at Anheuser-Busch InBev, where he held multiple roles, including Zone Technical Expert for Hops & Craft Brewing, and Technical Manager at Fluent Beverages, a subsidiary of ABInBev, working on legalized cannabis beverages for the Canadian market.
