Studies in the Department include research in obesity, cellular nutrition, functional food components such as soy and fiber, nutrition and reproduction, nutrition education needs of diverse groups, and community-based interventions. The program offers the M.S. and M.P.H. degrees in Nutrition and the Ph.D. degree in Public Health with a concentration in Nutrition. The M.S. program (thesis and non-thesis) offers two options, one specializing in Nutrition Science and the other specializing in Community Nutrition. Programs of study and research are planned on an individual basis by each student to support the individual's research and career goals. Students select from courses in the department and from other departments and programs in the University, such as: Animal Science, Biology, Biostatistics, Community Health Education, Environmental Health Sciences, Epidemiology, Kinesiology, Food Science or Molecular and Cellular Biology.

Teaching and research assistantships are available on a competitive basis. Stipends depend on source of funding and level of experience. Assistantships and certain fellowships or scholarships qualify for waiver of tuition and fees. A limited number of Graduate School Fellowships are available on competitive basis.

The admission requirements of the Graduate School include: A completed Graduate School Application and forms, GPA > 2.75; GRE General Test; official transcripts from all colleges attended; and two letters of reference. TOEFL exam scores are required for foreign nationals. Courses in general chemistry, organic chemistry, biochemistry, anatomy and physiology, microbiology, statistics, and basic nutrition are required for admission.
