ROBERTO SANTIBAÑEZ: Is the chef/owner of Fonda restaurant in Brooklyn, NY, the culinary partner of The Taco Truck in Hoboken, NJ and the president of Truly Mexican a New York based consulting firm. As a native of Mexico City and a graduate with honors from Paris's top culinary institutions, award-winning Chef Roberto Santibañez' culinary resume includes stints as restaurateur, culinary consultant, author and teacher in Mexico, Europe and the United States. His 2007 book Rosa's New Mexican Table was nominated for a James Beard Award. His new book Truly Mexican is dedicated to essential recipes and techniques for authentic Mexican cooking. Roberto is a member of The Culinary Institute of America's Latin Cuisines Advisory Council.
