Class I Percentages Across the U.S

Text Box: There are now 11 different Federal Milk Marketing Orders across the U.S.  The percentage of milk going to Class I use varies across those orders. The graph below shows that distribution. For example, over 85 percent of the milk produced in Florida was used for fluid milk in 2003. Between 31 and 35 percent of the milk produced in the Upper Midwest and the three western orders goes into fluid use. The Northeast was near the middle of the distribution at 44.6 percent in 2003.
